Pine nut cookies HOW TO DO IT Roast the pine nuts in a dry pan while stirring. Remove 1 tbsp from the roasted seeds and set aside. Finely chop the remaining seeds in a lightning chopper.

Mix the flour and baking powder in a bowl. Knead the chopped pine nuts, pieces of butter, sugar, egg, lemon oil and liqueur to form a soft dough. Shape the dough into a ball, wrap in cling film and refrigerate for 1 hour.

Line a baking sheet with parchment paper. Shape the dough into about 30 walnut-sized balls with damp hands; Place these on the baking sheet a little bit apart.

Press 2-3 pine nuts into each ball of dough with your finger, gently flattening the cookies.

Bake the cookies in a hot oven for about 20 minutes until golden. Remove. Place immediately on a wire rack, dust with icing sugar and then let cool down completely.

BACK TIP Prepare the dough without pine nuts and only use 100 g butter. Roll out the cooled dough on a greased baking sheet, brush with egg yolk and sprinkle with chopped pine nuts. Bake in the oven for 12–15 minutes. Take out of the oven and immediately cut into small diamonds.
